Tasty Tuesday: Black Bean Cilantro Chicken (Crockpot Recipe)

Black Bean Chicken Slow Cooker Recipe

     I love easy recipes, don’t you? That’s why slow cooker recipes are so great. You can do a little prep ahead of time, throw in the crock-pot and it cooks while you go about your business–you can even leave the house!
     If you love meals that cook themselves as much as I do, I’m sure you’re going to love this Cilantro-Lime Chicken slow cooker recipe. It is perfect served with brown rice or quinoa and some from fresh tomatoes and avacado!

     Besides the obvious slow-cooker, the ingredients you will need are:

4 boneless skinless chicken breasts

     2 (15 oz) cans of black beans, drained and rinsed. You can do one can of beans and one can of corn instead, if you wish.
     2 cups finely chopped cilantro
     2 TBSP olive oil
     4 TBSP lime juice
     4 garlic cloves, minced
     1 cup chopped onion
     2 tsp chili powder
     1/2 tsp salt
     1/2 tsp pepper

     First, you want to mix all ingredients except the chicken breasts. It will make a nice cilantro-bean “salad.” Smells great too!

     Put about half of the cilantro-bean mixture in the slow-cooker. Lay the chicken breasts on top of the mixture and cover with the remaining cilantro-bean mixture. Add about 1/2 cup of water to the slow-cooker and cook on LOW 6-8 hours or HIGH 4-5 hours.
     When the chicken is done (it will be moist and juicy!) serve it up on plate, topping with a heaping serving of the bean mixture and serve with rice (or chips, or tortillas) and enjoy!
