Low Carb Fried Mozzarella Sticks

 Low Carb Mozzarella Sticks Recipe

 I love fried mozzarella sticks. I don’t usually get to have them when we go out to eat, because we don’t usually get appetizers, cause they’re kind of expensive. Also, the breading is not exactly on plan on Trim Healthy Mama. Which brings me to this idea of low carb mozzarella sticks. Honestly these are a little more work than I typically like, but they are worth it when they’re done!

Ready to get started? Here’s what you’ll need:

8-10 string cheese mozzarella sticks, cut in half

2 eggs

1 cup THM Baking Blend

2 TBSP Mrs. Dash original seasoning  (or whatever seasoning you prefer)

1 tsp salt

1 cup refined coconut oil for frying

Line a cookie sheet with a piece of wax or parchment paper. In one bowl, beat the eggs and in another bowl mix together the baking blend, salt and seasoning.

Immerse one of the cheesestick halves into the eggs, then coat with the baking blend mixture. Dip it again into the eggs and again into the dry mixture. This is important for creating a seal. Place the battered sticks onto the cookie sheet, not touching.

Once all the sticks have been battered, place the cookie sheet in the freezer, at least an hour. When you are almost ready to start frying them, heat up about an inch of coconut oil in a cast iron skillet (I use one like this) about 5-10 minutes. 

Remove the cookie sheet from the freezer and place as many sticks as will fit without overlapping into the oil. I find it best to use kitchen tongs for this, so you don’t get splashed with hot oil. Fry them in the oil about 2-3 minutes, until the breading turns brown, then turn them and cook there other half. Meanwhile, put a couple of paper towels on a plate (to soak up grease) so it’s ready when the mozzarella sticks are ready.

With a slotted spoon or tongs, remove the mozzarella sticks one at a time from the grease. Lay them on the paper toweled plate to cool and drain excess grease while you work on the next batch (if there is another).

And that’s it! You have a delicious plate of mozzarella sticks that will likely be downed in no time flat. 🙂
