Sugar Free White Chocolate Truffles

One of my favorite “special occasion” chocolates has always been the Lindt Lindor truffles. Specifically, my very favorite variety was the milk chocolate with the white chocolate center. Those always seemed to be a limited time edition variety though.

I haven’t actually bought Lindor truffles in some time because they’re full of sugar and there are no sugar free Lindt Lindor truffles available for purchase. So I made my own.

With mother’s day coming up, I felt like this was the perfect time to share this recipe for those looking for sugar free Mother’s Day gift ideas.

What is the best sugar free chocolate to use?

In my opinion, Lily’s is the standard in taste and texture when it comes to sugar free chocolate and I am so thrilled that Lily’s finally came out with sugar free white chocolate as it has opened up a whole world of possibilities.

If you’d rather stay away from inulin, you could use Choc Zero chocolate chips. They do contain corn fiber, making them more of personal choice item if you’re following Trim Healthy Mama, but that might be a fair trade off if you really need to avoid inulin.

Do these low carb truffles need to be refrigerated?

Yes, these chocolate truffles should be kept in the refrigerator. The texture of these is perfect straight out of the fridge.

Even chilled, these truffles are so easy to bite into. In fact, not chilling them would probably make a gooey (though delicious) mess.

Sugar Free White Chocolate Truffle Recipe

1 cup Lily’s white chocolate chips

1/2 cup heavy cream

3/4 cup Lily’s milk chocolate chips (optional, for dipping)

1 TBSP coconut oil (added to the milk chocolate chip, if using)

How to make 2 ingredient white chocolate Truffles

The truffle filling is the easy part.

Microwave 1/2 cup heavy cream 2 minutes. You can also heat the cream up in a double boiler if you prefer to use the stove.

As soon as the cream is removed from the microwave, dump in the 1 cup of sugar free white chocolate chips and stir until emulsified.

Refrigerate about an hour, then once it is chilled and firmed up a bit, you can start rolling the truffle filling into balls.

Scooping about 2 tsp of the truffle mixture with a spoon, gently roll it into a ball. Place the truffle balls onto a cookie sheet lined with wax paper.

After I’ve rolled a few balls, my hands start to get chocolatey, so I have to wash my hands and start fresh a few times.

Place the truffle balls in the freezer for an hour or 2 until they are completely frozen and move on to the dipping step if you’re doing that.

How to dip truffles in chocolate

When you’re ready to add the milk chocolate coating, put the milk chocolate and coconut oil in a double boiler set over a pot with water.

You want to make sure the water level is not high enough to touch the bottom of the double boiler, so make sure to get a pot that is not too shallow.

Set the heat to medium low until the chips are melted then put it on low.

It is tempting to set it higher so it melts faster, but if you do, the chocolate will overcook and start to dry more quickly than it would otherwise. By keeping it at low, it will stay at a stable texture for longer.

Once the chocolate is melted and ready for dipping, get the truffles out of the freezer. You will want to work fairly quickly, as the truffle filling will melt and get harder to keep its shape.

Place the frozen truffle ball on a candy dipper. I highly recommend this chocolate dipping set. I have all except the drizzle scoop, which I’m planning to get soon, and use all of these tools frequently for chocolate making.

For this recipe I used the slotted spoon, as it gives me that little bit of surface area for slightly turning rolling the ball back and forth to make sure it is completely coated.

Hold the truffle over the melting chocolate, and using a spoon or drizzling scoop, pour chocolate over the the truffle, rolling gently around the dipping to coat the whole surface.

Place the coated truffle back on the wax paper.

When all the truffles are coated, place them in the fridge to solidify. They should be ready to eat in about an hour.

Store in the fridge or freezer in an airtight container.

If you have leftover chocolate you can use it to dip some strawberries or sugar free marshmallows!

Variations of 2 ingredient Sugar Free Truffles

The low carb truffle filling itself is quite easy, but if you want the milk chocolate coating like I prefer, it is a little bit more work.

If you don’t care about the milk chocolate coating, you can simply roll it in chopped nuts, powdered sweetener, cocoa powder or sugar free sprinkles! You can skip the freezing step (after the dough is rolled into balls) in this case.

In fact, you don’t have to use white chocolate at all. Lily’s has quite a few flavors available at Walmart, such as chocolate mint, butterscotch and salted caramel.

Simply replace the white chocolate chips with any flavor you like.

Lindor Hot Chocolate Bombs

Though I have never been to a Lindt chocolate store, my mom has one in the area where she lives and she told me about the hot chocolate they make there.

It’s basically Lindor truffles and steamed milk.

Do you know what that means?

That means these easy sugar free truffles can also double as sugar free hot chocolate bombs.

I personally like to use Fairlife skim milk for my hot chocolate. Fairlife has about half the lactose of regular milk and is considered to be ok for occasional use while following Trim Healthy Mama.

1/2 cup of Fairlife is the serving size for S and 1 cup is the serving size for E.

Unsweetened almond milk is preferred for being on plan, but it does lend a slightly different taste. If using unsweetened almond milk, feel free to use an entire cup and omit the water.

I like to add a tsp of Gentle Sweet, or my DIY blend found in this post and I think it makes it just right, but it’s completely optional. You can also use Pyure which can be found in most grocery stores.

Low Carb Truffle Hot Cocoa Ingredients

1/2 cup of unsweetened almond or Fairlife milk

1/2 cup water

5 sugar free truffles (from the above recipe)

1 tsp Gentle Sweet or equivalent (optional)

Place the sugar free truffles, milk and water in a microwave safe mug. Microwave 1.5 minutes. Add in sweetener if using and stir with an electric frother.

If you prefer not to use a microwave, you can also heat it on the stove in a quart sized pan. Simply heat it up on medium high until all the chocolate is melted and can be thoroughly mixed.

Enjoy plain, with a dallop of sugar free whipped cream or sugar free marshmallows!

  1. I just made these with the bowl over pot to melt the white chocolate chips. I put the heat on low and it seemed to dry out the chips, where I never got to the creamy melted state. I added a little more coconut oil and it seemed better, but when I added the frozen truffle, some of the coconut oil hardened into tiny balls and made it hard to cover the truffle. I think next time I may try just melting the chips by themselves in the microwave on low power. However they taste incredible!! Thank you so much for creating this recipe – will make again and again.

    1. Hi Cindy, you need to make sure you only use a little water, the bowl mustn’t touch the water. Also, the bowl should be a heat safe glass bowl. I use a medium glass mixing bowl because smaller bowls get too close to the water and the bottom of the pan, thus too much direct heat resulting in dried out chocolate. This worked really well for me.
