Easy Instant Pot Chili Trim Healthy Mama Recipe THM S Recipe

I love chili. Especially in the winter months. I also love really easy meals. So this instant pot chili is perfect for me. This is an S on the Trim Healthy Mama plan, but there is an E or FP option at the bottom if that’s what you prefer.

Once upon a time, I used to make this on the stove. But now that I have an Instant Pot, I use it for pretty much all my soups. I also have super easy and delicious white chicken chili that is an E, if you’re interested!

Up to 1/4 cup beans is allowed in an S setting, up to 1/3 for “S helper.” The amount of beans included in this recipe should keep you within those parameters.

Instant Pot Chili Ingredients

1.5 -2 lb cooked ground beef

1 15 oz can red kidney beans, drained and rinsed

2 15 oz can diced fire-roasted tomatoes

1 cup of water or chicken broth

1 cup salsa (how spicy the chili is will depend on the salsa you use)

3 TBSP dried minced onion

2 TBSP Chili powder

2 tsp cumin

Instant Pot Chili Instructions

Brown the meat in a frying pan if you don’t have it already cooked. While it’s cooking, go ahead and dump all the other ingredients in the pressure cooker.

Drain the cooked hamburger meat in a collander placed over a bowl to collect the excess tallow. You don’t want all that grease going down your drain! Later, once the grease cools and solidifies, you can scrape it into the trash.

Add the cooked ground beef to the Instant Pot, stir the ingredients a bit, then close and seal the pot. Press the bean/chili setting and set to 40 minutes.

Serve it up with cheese, sour cream, green onions–whatever you like with your chili!

For a FP option, use 96% lean ground beef, or rinse under super hot water after cooking. For an E, rinse the beef and add another can of beans and limit additional fats like cheese. I like to have a tablespoon or two of reduced fat cheddar with my E chili!

Slow Cooker Option

If you don’t have an Instant Pot, or you’d simply prefer to make this in a slow cooker, this recipe works fine with that as well. Then you would cook on low for 8 hours.

You may want to add another cup of water since more moisture tends to escape when using a slow cooker. This is assuming you are using a regular slow cooker. The slow cooker setting on the Instant Pot still keeps moisture sealed in pretty well and extra water may make your chili a little more soupy.
