Chicken Alfredo Lasagna Roll Ups
Ingredients:
9 lasagna noodles
2 1/2 cups Alfredo sauce
2 cups cooked, shredded chicken
oregano, to taste
garlic powder, to taste
3 cups shredded mozzarella
Cook the lasagna noodles according to package directions. I made a few extra, in case any of them broke.
After draining the noodles, I made sure to rinse them in cold water and pat them dry before laying them out on cookie sheets ready for topping.
You are supposed to spray an 8×8 inch pan with cooking spray. I did want to say, we didn’t have any spray, so I didn’t grease it in any way and they came out great. We do have a non-stick pan though.
I spread 2 Tbs of sauce on each noodle and sprinkled with the seasonings.
Then I split the 2 cups of shredded chicken up between the 9 noodles.
I then topped them with cheese.
I very carefully rolled them up and placed them seam side down in the pan.
I poured the remaining sauce on top of the roll ups and covered with the rest of the cheese.
They baked in a 350 degree oven for 30 minutes. Then I set the oven to broil and let the cheese brown for a few minutes.
Directions:
1- Cook the noodles according to package directions, rinse with cold water and pat dry.
2- Spray 8×8 inch baking pan and pour in approximately 1/2 cup of sauce.
3- Lay out noodles and spread 2 Tbs of sauce onto each noodle, then sprinkle with seasonings.
4- Divide and spread shredded chicken on top of noodles.
5- Add 3 Tbs of cheese to each noodle.
6- Roll up carefully and place in pan, seam side down.
7- Pour remaining sauce on top and cover with remaining cheese.
8- Bake in a 350 degree oven for 30 minutes. Broil for a few minutes to brown the cheese.
9- Enjoy.
