Squash Casserole

Here is a really good recipe for squash casserole. This is very similar to the dish my mother-in-law makes every holiday and I love to make it to give my hubby a little taste of home!

This recipe is very easily doubled and if you are following Trim Healthy Mama, this is a super yummy S! I’ve been making this for a while, and I don’t actually use a recipe. I just kinda make it. But last time I made it I measured out the ingredients. I used: 

    4-5 yellow squash (5 if the squash are on the scrawny side)
     1 egg
     1 TBSP butter
     2 TBSP mayonaise
     3/4 cup shredded cheese
     optional bread crumbs for topping (You can use low carb bread crumbs, THM baking blend or shredded cheese for low carb!)

First, slice the squash into round slices. I used my new mandolin slicer. I was really just looking for an excuse to use it. 🙂

Then boil the squash just long enough to where they are easily pierced with a fork (not mushy). What might be called “al dente” if it were pasta.

Next, I mix the squash with the egg, butter, mayo and cheese.

Finally, I put it all in a 9×9 baking pan coated with cooking spray. Top with a layer of bread crumbs and cook at 350 degrees about 30 minutes or until brown on top. My favorite way to eat squash!

  2. This is a healthy, easy Squash recipe that looks so delicious! I would love to make this, and squash is in the stores now. I am going to make this today!
